Chia Seed Pudding, yum! I’m sure most of you have heard about the Keto diet. It is a diet I went on after the birth of my son and for me, it was the only diet that worked. In three months not only did I lose all the stubborn baby weight, but because of the keto diet, I lost and additional 10 pounds of pre-pregnancy weight as well!
I am a little biased on this diet personally. I’ve been doing lazy keto again now (not counting macros or nutrition, just focused on eating within the guidelines and intermittent fasting). One of the diet desserts I like to make is this chia seed pudding, it is so simple and delicious to make!
The hardest part of making this low carb dessert is the wait, lol. You can top it with strawberries, blueberries, a little bit of coconut will work too. So, if you want to learn how to make this, please read on and enjoy!
Keto (Low Carb) Chia Seed Pudding
How Do I Make Chia Seed Pudding?

Note: Some people like to substitute coconut milk for almond milk. If from carton, use as replacement for almond milk, or if from can (which is thick) use a couple tablespoons and dilute in water.
If you would like to sub the coconut milk, use 1 cup of full fat coconut milk.
Keto (Low Carb) Chia Seed Pudding
Ingredients
- 1/2 cup chia seeds
- 1/2 cup heavy whipping cream
- 1 cup unsweetened almond milk
- 1/8 teaspoon salt
- 3 teaspoon stevia or other low carb equivalent sweetner
- 1/8 teaspoon vanilla
Instructions
- 1. In bowl, whisk all ingredients together. Rest a minute, then whisk again vigorously.
- 2. Cover and set in fridge. Rest in fridge until pudding consistently, usually overnight is best.
