Caldo de Res is a traditional Mexican beef soup that be found in many Mexican restaurants. It is made with beef shanks, corn, carrots, potatoes and other vegetables. It is hearty, flavorful and the ultimate comfort food! Have you ever tried it? This is a soup that is found in many Mexican restaurants, so you can always order it before you make it at home! I will say though, if you like beef and vegetables, its a pretty easy and delicious soup. Pair it with limes, rice and tortillas. Perfect for that upcoming cold weather too!

Caldo is the Spanish word for soup. Other popular caldos can include caldo de pollo (chicken), or caldo de mariscos (shrimp).

How To Make Caldo De Res

Here is the recipe below! Pretty easy, combine meat with a bunch of veggies, a squirt of lime and voila!

How To Make Caldo de Res (Mexican Beef Soup)

A hearty and delicious Mexican beef soup made with beef broth, beef, corn, carrots, squash, potatoes and other vegetables.

Ingredients
  

  • 2 lbs bone in beef shanks
  • 4 red potatoes, cut into quarters
  • 4 corn on cob, cut into quarters
  • 2 zucchini, cut into chinks
  • 2 carrots, cut into chunks
  • 1/2 medium white onion
  • 1/2 head of cabbage, cut into eights
  • 3 tbsp cilantro, chopped
  • 4 garlic cloves, minced
  • 4 limes, sliced in half, for serving
  • 12 cups water
  • other spices to taste: salt, pepper, cumin

Instructions
 

  • Combine beef shanks with onions and garlic in large pot. Sprinkle with salt and bring to a boil. After boiling, reduce heat and simmer for 30 minutes.
  • Uncover and skim off any foam. Add vegetables and spices to taste. Simmer for another 30 minutes.
  • Turn off heat and serve hot. Pair it with lime wedge, rice and tortillas.

**I highly recommend adding the lime juice to your caldo when served! It transforms the flavor of the soup, adding freshness and a bit of tang to a hearty soup!

How To Serve Caldo De Res

You can pair this soup with rice and tortillas. The rice can be added to the soup or eaten separately. This is the standard that you will see over and over again. Some people serve this with salsa on the side. The choice is yours.
