Red White and Blue Keto Dessert Salad

It has been a journey being on this keto diet I have been on, so I try to make dishes that I can eat without feeling guilty. I know that on keto, you can have strawberries and blueberries, sugar free jello, and heavy whipping cream. That is the base of this recipe! It is so delicious, in line with the keto diet and even people that are not on keto or low carb will tell the difference. So let’s just get straight into the recipe!

Easy to Make Keto Dessert Recipe

Red White and Blue Keto Dessert Salad

Red, white and blue keto diet approved dessert salad, perfect for a holiday dish!

Ingredients
  

  • 1 8 ounce package of cream cheese
  • 1 1 ounce package of white jello pudding (I used white chocolate)
  • 1 cup heavy whipping cream
  • 1 cup diced strawberries
  • 1 cup diced blueberries
  • 1/2 juice of one lemon

Instructions
 

  • In a mixing bowl, using an electric mixer, whip cream cheese until smooth. It can get stuck in the beaters, but will eventually get smoother. Add dry pudding mix and combine well.
  • With electric mixer on low, SLOWLY add heavy whipping cream, about one tablespoon at a time. Be patient with this step, or else it wont mix smooth and clump up. Refrigerate mix when done.
  • Dice strawberries until desired. I quartered whole strawberries.
  • Add diced strawberries, blueberries and lemon juice. Refrigerate for an hour.

Here are a couple of notes on this Keto Dessert:

  1. The cream cheese will lump up in the beginning. Just keep on mixing it. I paused about three times to get it out of the beaters. You can always add a splash of heavy whipping cream to get it going. The consistency will also change when you add the pudding mix.
  2. Pour the heavy whipping cream slowly in to the mix. It will clump up if you pour it all in at once.
  3. You can also add bananas, marshmallows, or coconut flakes if you are NOT worried about staying within the keto diet.
