My husband absolutely loves it when I make these loaded breakfast egg muffins for him. He wakes up for work every morning at 5:15am and leaves the house by 6:00am to fight the lovely rush hour morning traffic. During those quick 45 minutes he has before he leaves for work, he takes a shower, gets dressed, makes his coffee and prepares his food for lunch which consists usually of leftover dinners from the night before. Sometimes I don’t make these lovely muffins because life happens or I simply forget, but when I do, he is so very appreciative! I always get compliments each and every time I make them.

This recipe is really just a mix of things I currently have in the kitchen, but I do always tend to have a staple of ingredients I use each and every time I make them. The ingredients can vary, but it is usually as follows and it fills up a muffin tin of 12 muffins:

 

Loaded Breakfast Egg Muffin Ingredients

  • 8 eggs
  • 4 slices of ham, cut into tiny pieces

  • Half cup of shredded cheese (any kind)
  • 3-4 Broccoli Florets, minced
  • 1/3 cup milk
  • salt (to taste)
  • pepper (to taste)
  • garlic powger (to taste)
  • paprika(to taste)
  • oregano (to taste)

*You can also add other ingredients such as  mushrooms, spinach, tomato, onion, garlic, black olives, salsa, jalapeños, etc. Anything really!

Directions

Heat oven to 375. In a bowl mix all above ingredients. Spray the baking muffin pan with cooking spray. Fill each muffin bowl with muffin mixture about 2/3 full. Place in oven and cook for 20 minutes. Muffins will rise and the tops will become a very light golden color. Take out of the oven and let it cool for about five minutes.

Personally, after the five minutes are up, I grab a butter knife and gently wiggle them loose, then flip them over and out they come! You can serve them warm, we will usually eat a couple before we put them in a ziplock bag so that he can eat in the mornings on his way to work.  He likes to pop about three of them in the microwave for about 60 seconds just as he is about to leave. I love making these for him because I know he is usually half asleep and doesn’t really have time to be making breakfast himself! It also saves money not having to stop at a fast food restaurant for a quick go to breakfast. Plus, nothing beats home cooking, lol.
