My husband absolutely loves it when I make these low carb-keto breakfast egg muffins for him. Even though he is not on any keto diet, I try to be. These low carb egg muffins are a great meal prep breakfast item, it takes only a minute to warm up in the microwave and then off he goes with his morning cup of coffee! He wakes up every morning at 5:15am and only has about 35 minutes to leave the house before traffic gets really bad. I am sure many of you can relate! These breakfast muffins are pretty easy to make. You can add just about anything you like to these breakfast egg muffins. I always get compliments each and every time I make them and they are eaten at least two at a time.
This recipe is really just a mix of things I currently have in the kitchen, but I do always tend to have a staple of ingredients I use each and every time I make them. The ingredients can vary, but it is usually as follows and it fills up a muffin tin of 12 muffins:
Low Carb-Keto Loaded Breakfast Egg Muffins
Low Carb-Keto Breakfast Egg Muffins
Ingredients
- 8 eggs
- 4 slices ham, diced
- spinach (to taste)
- 2 whole mushrooms, diced
- onion, diced ( to taste)
- 1/3 cup shredded cheese
- 1/3 cup milk
- salt (to taste)
- pepper (to taste)
- garlic powder (to taste)
- paprika (to taste)
Instructions
- Heat oven to 375 degrees F. In a mixing bowl, mix all ingredients above.
- With a muffin pan, spray, oil or butter pan with non-stick so muffins won't stick to pan. I used non stick cooking spray.
- Fill each muffin bowl with mixture until 2/3 full. Place in oven and cook for 17-20 minutes. Muffins will rise and the tops will become a light golden brown.
- Take out of oven and let cool for about five minutes. After cooled, grab butter knife or spoon and wiggle them loose.
Great Option For a Breakfast Meal Prep!
*You can also add other ingredients such as tomato, onion, garlic, black olives, salsa, jalapeños, etc. Anything really!
Make Ahead and Save Time Breakfast Muffins
You can serve them warm, we will usually eat a couple before we put them in a ziplock bag. When the busy work week comes, these breakfast egg muffins are a lifesaver. Instead of stopping at a fast food place or eating cold cereal, these muffins provide a healthy on-the-go breakfast option full of protein and deliciousness.
You can pop about three of them in the microwave for about 60 seconds and then be on your way. Plus, nothing beats home cooking, lol.
