Loaded Baked Potato Skins are a great family appetizer for any party or game day food! This recipe for can be made all the way, traditionally in the oven or even made in under 30 minutes!
These potato skins are crispy on the outside and loaded with crispy bacon, melted cheese and flavorful green onion on the inside! They can be served with a side of sour cream, ranch dressing, or whatever you choose.
This appetizer is always a crowd pleaser and a big hit to to eat while you watch the Superbowl or any big game day! Yum!!
I love ordering loaded potato skins when I go to any restaurant. I finally wanted to be able to make them at home though! After I got over the intimidation of making them, I found out they are pretty easy to make! These taste delicious and were gone in just minutes, haha.
They are now a favorite in our home and a great appetizer for hosting big parties, small parties, tailgate parties, pretty much any gathering. If I am not making them, I will be asked to make them, lol!

So, I am going to show you the traditional way and then I am also going to show you the quick and easy way to make them too! Because some of us don’t have all the time in the world, AM I RIGHT?!

Are potato skins good for you?
Well, let me say that if you eat 800 of these, or eat these all day everyday, the answer is NO. But….in moderation, potatoes pack a punch of healthy vitamins and minerals! Potatoes contain a good amount of carbs and fiber, as well as vitamin C, vitamin B6, potassium and manganese.

What can I top my potato skins with?
The possibilities are really endless, but I like the classics. Bacon, melted cheese, sour cream and diced green onions. You can also put broccoli, jalapeno, guacamole, cream cheese, corn, black beans, I mean it is truly whatever you like! They are versatile.
How To Make Loaded Baked Potato Skins
Loaded Baked Potato Skins
Ingredients
- 6 Russet potatoes
- olive oil
- melted butter
- shredded cheese, bacon, green onion, or any other toppings you wish
Instructions
- Preheat oven to 400 degrees.
- Wash and scrub potatoes and pat dry.
- ** TRADITIONAL VERSION: Rub the skin with olive oil and place in a baking sheet. Bake 45-55 minutes until potatoes are soft and tender.
- **FOR QUICK VERSION: Poke holes in the potatoes and bake in microwave until potatoes are tender and soft. Depending on microwave, bake about 7-10 minutes, turning once mid way through cooking.
- Remove potatoes from pan and allow them to cool until you can handle them.
- Cut potatoes in half, lengthwise. Using a spoon, scoop out center of sliced potatoes. Be sure to leave a little bit of potato so they can be stirdy enough to hold filling.
- Using melted butter, brush on to outside skins of the potato and place face down back in pan. Bake for 6-8 minutes.
- Using tongs, flip over and baste with butter. Bake an additional 6-8 minutes.
- Fill skins with shredded cheese, cooked bacon, diced green onion, or any other fillings you wish. Return to oven long enough for cheese to melt, about 4-5 minutes. Enjoy!

I really enjoy loaded potato skins, but I’ve only even had them at a restaurant, now I want to give it a try making them. Love how it’s such a simple recipe.
