Snowball Cookies, Mexican Wedding Cookies
These cookies melt in your mouth and are so delicious. It is hard to have just one! They have a nutty, vanilla flavor and are a wonderful holiday cookie and delicious treat.
Ingredients:
2 cups All Purpose Flour
1/2 cup Powdered Sugar (plus a little more on the side for rolling after baked)
2 tbsp Vanilla Extract
1 cup Pecans
1 cup (2 sticks) Butter
Directions
Preheat oven to 350 F. Prepare a parchment paper or wax sheet lined baking sheet.
In a large bowl, mix all ingredients together with a mixer. (Make sure butter is soft enough for mixing)
Using powdered sugar on your hands, grab a tablespoon of dough and roll into a small ball. Place on cookie sheet. Repeat until you have used all mixture.
Bake for 12 minutes or until light golden brown. Let the cookies cool for a little bit, but when still warm roll them in the powdered sugar once more to cover. Let cool and store in an airtight container.
The mix will seem dry or crumbly in the beginning, but keep mixing and it will all come together.
You can also try replacing the pecans with chocolate chips, macadamia nuts, shredded coconut, add cinnamon or stuff the cookies with a Hershey’s Kiss!
