Preheat oven to 375F and line your baking sheet with parchment paper.
Finely chop the spinach and artichoke hearts.
In medium bowl, add spinach, artichoke hearts, ricotta cheese, and spices. Mix all together. Set aside.
Roll out croissant dough out. Get a rolling pin and roll dough out evenly. You can pinch the seams to make sure dough stays together. This will help when you start rolling it.
Spread the bowl mixture evenly on the dough sheet.
Gently roll up the dough sheet starting from one end to the other end. (If you roll lengthwise, you can have more servings.)
Very carefully, cut the roll to 1/2 inch -3/4inch slices. (Tip: After each cut, spin the roll a little bit again so that your roll wont start to flatten and maintains its shape)
Arrange the slices in the form of a Christmas tree on your parchment paper and bake for 25 minutes or until well done. (Optional is sliced grape tomatoes)
Sprinkle some parmesan cheese and enjoy!
