Snowball Cookies, Mexican Wedding Cookies

A melt in your mouth holiday cookie! Butter, pecans, powdered sugar all combine to make an irresistible treat!

Ingredients
  

  • 2 cups All Purpose Flour
  • 1/2 cup Powdered Sugar plus more on the side for rolling warm cookies after
  • 1 tbsp Vanilla Extract
  • 1 cup Pecans
  • 1 cup Or 2 sticks Butter

Instructions
 

  • Preheat oven to 350 F. Prepare a parchment paper or wax sheet lined baking sheet.
  • In a large bowl, mix all ingredients together with a mixer. (Make sure butter is soft enough for mixing)
  • Using powdered sugar on your hands, grab a tablespoon of dough and roll into a small ball. Place on cookie sheet. Repeat until you have used all mixture.
  • Bake for 12 minutes or until light golden brown. Let the cookies cool for a little bit, but when still warm roll them in the powdered sugar once more to cover. Let cool and store in an airtight container.
  • The mix will seem dry or crumbly in the beginning, but keep mixing and it will all come together.
  • You can also try replacing the pecans with chocolate chips, macadamia nuts, shredded coconut, add cinnamon or stuff the cookies with a Hershey's Kiss!
