Preheat oven to 400 degrees.
Wash and scrub potatoes and pat dry.
** TRADITIONAL VERSION: Rub the skin with olive oil and place in a baking sheet. Bake 45-55 minutes until potatoes are soft and tender.
**FOR QUICK VERSION: Poke holes in the potatoes and bake in microwave until potatoes are tender and soft. Depending on microwave, bake about 7-10 minutes, turning once mid way through cooking.
Remove potatoes from pan and allow them to cool until you can handle them.
Cut potatoes in half, lengthwise. Using a spoon, scoop out center of sliced potatoes. Be sure to leave a little bit of potato so they can be stirdy enough to hold filling.
Using melted butter, brush on to outside skins of the potato and place face down back in pan. Bake for 6-8 minutes.
Using tongs, flip over and baste with butter. Bake an additional 6-8 minutes.
Fill skins with shredded cheese, cooked bacon, diced green onion, or any other fillings you wish. Return to oven long enough for cheese to melt, about 4-5 minutes. Enjoy!
