Loaded Baked Potato Skins

Perfect appetizer for any party, game day, Superbowl, or any party big or small. 

Ingredients
  

  • 6 Russet potatoes
  • olive oil
  • melted butter
  • shredded cheese, bacon, green onion, or any other toppings you wish

Instructions
 

  • Preheat oven to 400 degrees.
  • Wash and scrub potatoes and pat dry. 
  • ** TRADITIONAL VERSION: Rub the skin with olive oil and place in a baking sheet. Bake 45-55 minutes until potatoes are soft and tender.  
  • **FOR QUICK VERSION: Poke holes in the potatoes and bake in microwave until potatoes are tender and soft. Depending on microwave, bake about 7-10 minutes, turning once mid way through cooking.
  • Remove potatoes from pan and allow them to cool until you can handle them. 
  • Cut potatoes in half, lengthwise. Using a spoon, scoop out center of sliced potatoes. Be sure to leave a little bit of potato so they can be stirdy enough to hold filling.
  • Using melted butter, brush on to outside skins of the potato and place face down back in pan. Bake for 6-8 minutes. 
  • Using tongs, flip over and baste with butter. Bake an additional 6-8 minutes. 
  • Fill skins with shredded cheese, cooked bacon, diced green onion, or any other fillings you wish. Return to oven long enough for cheese to melt, about 4-5 minutes. Enjoy!
