Easy Stuffed Bell Peppers

These stuffed peppers are easy to make, great for a weekday meal and a healthy option too! 

Ingredients
  

  • 2-3 whole Red, Yellow, or Orange Bell Pepper
  • 1 lb ground beef
  • 1/4 cup chopped onion
  • 2-3 cloves minced garlic
  • sliced mushrooms
  • shreaded cheese
  • bacon bits
  • green onion, diced
  • salt, pepper, paprika, oregano, parsley

Instructions
 

  • Heat up skillet. Brown onion and diced garlic until fragrant. Add sliced mushroom and cook for about 3 minutes. Add ground beef and cook until done. Drain grease add spices.
  • Preheat oven to 350 degrees F. Slice bell peppers in half and secure two to each other with two tooth picks, one on top and one on bottom. Fill the bell peppers with ground beef stuffing. Top with shredded cheese, bacon bits and diced green onions or parsley, or both if you like the flavor.
  • Grease casserole dish and place stuffed the paired bell peppers in dish. Put in oven and bake uncovered for 25 minutes or until cheese is completely melted. Ready to serve!
