Eggplant Lasagna Dinner

I recently promised myself to step out of my cooking comfort zone and try out a new recipe at least once a week. I haven’t been feeling well today, so I wanted to save my energy for one main dish that I have never made and keep my promise to myself. I chose an eggplant lasagna dinner dish! I have never in my life cooked with eggplant. I have tried it a couple of times, but I have always been a little intimidated by it to be honest. However, the last time we went to our local grocery store, I made it a point to buy a coupe vegetables that I have never cooked with! I finally bought the intimidating eggplant. I am so glad I did!

So tonight, I made a dish called Easy Low Carb Eggplant Lasagna from Wholesum – Yum Low Carb Recipes. I have got to say, it turned out pretty good! I will mention while I did follow the recipe for the most part, when it came time to brown the meat I added Worchester sauce. I also I used a can of diced tomatoes and a small can of tomato sauce instead of marinara sauce. Last, I didn’t have ricotta cheese, so I just added extra shredded cheese. Hey, you can’t go wrong with cheese, right? Lol, I also added my own spices, like rosemary and paprika and topped the dish off with some bacon bits. I always end up changing recipes a little, but I think that many of us are like that. I still give credit to this recipe. It was amazing!

Like I mentioned earlier, I wasn’t feeling well. I decided to keep it super easy with the side dishes. When I say easy, I mean I cooked Boil-In-Bag rice! Hey, I have no shame in my cooking game.  😉  I have used Boil-In-Bag rice many, many times and it has become a staple in my food pantry. It hasn’t failed me yet!  My husband always eats white rice with soy sauce, it’s his thing, lol. I looked in my refrigerator for a second side dish and saw we had a bag of some fresh green beans that we got from our local grocery store. I sliced off the ends and placed them in a large pot on the stove. I steamed them on low for about 20 minutes and added salt, pepper and garlic powder. Halfway through I added a tablespoon of butter.

My family loved it and so for me, dinner was a success tonight! 👏🏻☺️🍆🍛🏡

    I love eggplant! I have a fried eggplant chicken parmesan that I cook but I can’t wait to try this!

    I love lasagna and I’ve seen recipes for zucchini lasagna and eggplant lasagna but hadn’t made up my mind to try either of them yet, but this seems interesting and easy enough… and it does look good!

    I have been experimenting lately with recipes that substituted the meat and this is a great one to add to my list! Eggplant is so easy and versatile!
